The Italian way to make ice-cream, or rather gelato, dates back to 1686: a chef from Sicily migrated to Paris bringing along with him a special machine who his grandfather, a fisherman, had created in his spare time eager to improve the quality of the existing varieties of gelato. After perfectioning it, Procopio – that’s the name of our Sicilian protagonist - reached Paris and founded a cafè where ice-creams were produced in his way: the success of his invention was tested by the immediate praise of the public, the cafè becoming one of the most popular hangouts in the city.
